This healthy chicken piccata recipe was absolutely amazing. and the entire family loved it! PRO TIP: Don’t tell them how healthy it is, then sit back and listen to them talk about how delicious it tastes. Once everyone has cleaned their plates, go ahead and drop the healthy bomb! HA! I chose to use a bundle of fresh herbs, but parsley would work just fine.
At the end of the recipe, I list some important notes and options to make this recipe compatible with various diet plans. Also, this recipe is pretty lemony, so simply cut back on the lemon if you prefer a more subtle flavor profile.
I served this easy chicken piccata over gluten free pasta with a side salad of local greens and a simple dressing of olive oil, lemon juice, salt, pepper, Italian herbs, and celery salt. You can also add some honey to sweeten it up a tad.
